RECIPE: FETA & COUS COUS SALAD WITH ROCKET AND CHILLI

Once again I prepared an impromptu dish and just as I’m about to tuck in I decide I should share it on the blog. Therefore this post isn’t picture heavy nor is it beautifully styled. But, it’s a real moment from my daily life which hopefully you will agree is far better! This cheeky cous cous salad is as a healthy vegetarian lunch option or a lightweight dinner that’s perfect during the summer months. Cous cous provides a good source of lean vegetarian protein, the grains swell up making this nice and filling and a good source of fiber. I added lot’s of complimenting flavours to make sure it’s satisfying and tasty.

Ingredients for 2 Portions

– 250G cous cous

– small brown onion

– handful of frozen peas

– small red chilli

 – handful of rocket

– a few fresh mint leaves

– 1/3 packet of feta cheese

Method

Start by preparing the cous cous. Pour the uncooked cous cous into a large bowl and stir through a tablespoon of olive oil, this helps keep the grains separate. Pour over 500ml of almost boiling vegetable stock, cover the bowl with a pan lid that fits and leave it for 10 minutes to swell up.

Finely chop the onion and chili and gently fry on a medium heat for 5 minutes then add the frozen peas, some salt and pepper and fry for another 5 minutes or until the peas are cooked. Once this is done add everything to the cous cous and mix together. Divide the mixture into bowls, add the washed rocket and sliced mint then crumble the feta cheese over the top. Finish with a good squeeze of fresh lemon. It’s healthy, fast and most importantly delicious.
